bliss balls 2 ways

Everyone needs a couple of dairy-free sweet treat recipes ready to go for bake sales and last-minute lunchbox snacks.

These two recipes were published on ‘tiny happy’ in 2013.

Quick energy balls

1 heaped cup dates

1/2 cup dried coconut

2 heaped tablespoons cocoa

pinch of sea salt

Soak the dates in boiling water for about 20 minutes. Then remove them from the water and place in a food processor with the other ingredients. Blend until the mixture is smooth. Roll into small balls, roll again in desiccated coconut and refrigerate until firm.

Apricot balls

1 cup (150-160g) dried apricots, roughly chopped

1 cup desiccated/shredded coconut

1/2 cup raw cashews (almonds also work well)

Zest of one orange and one lemon, finely grated

1 tbsp of honey or sugar

1-2 tbsp fresh orange juice

Extra desiccated coconut or crushed nuts, for rolling

Place all of the ingredients (except extra coconut for rolling) in a food processor and blitz until a firm paste. Remove and roll mixture into small balls. Roll in extra coconut and place in the fridge to firm up.
